Now that fall is coming, it might be time to change up your breakfast routine and treat yourself to a breakfast classic with a Cajun twist. It only takes 10 minutes to cook so you’ll have plenty of time to sit down and indulge alone or with your whole family! Plus, this breakfast is jam packed with protein and is surprisingly low in calorie so it’ll keep you full all day while maintaining a healthy diet!
Ingredients (per serving)
2 Large Eggs
A Pot of Boiling Water (3 inches deep)
1 teaspoon of salt
2 teaspoons of Dijon Mustard
1 Whole Wheat English Muffin
3 Dashes of Hot Sauce
1 Dash of Cajun Seasoning (Our Buddy’s Cajun Seasoning)
Bring water to a boil and add salt, then lower to medium heat. Crack each egg and drop into water separately. Let eggs poach for 3 minutes. Toast each half of the English Muffin. Lift eggs from water with slotted spoon and pat dry on paper towel. Spread mustard on each half of the English Muffin. Place poached eggs on top of each half of English Muffin. Dash Cajun seasoning and hot sauce on top. Enjoy and have a great day!
